I went a little bit crazy at HEB shopping for groceries, so, guess I’ll be eating at home! I occasionally calorie count just to get an idea of my normal daily intake, so here it goes.

I had a quick dinner of half a can of Amy’s Rustic Italian Soup and 1/4 of a link of smoked turkey sausage (298 calories). Yum! Guess I’ll pack the other half for lunch.

I also mixed some Pom pomegranate blueberry juice with sparkling water (100 calories). I don’t usually drink carbonated drinks and found it surprisingly filling.  I bought the Pom juice for the antioxidants since I’m not so great at eating fruit normally.

I was craving dessert so I had a small piece of Ghirardelli Intense Dark chocolate (86% cacao) (125 calories).

Total: 524 calories


Fried Tilapia

June 17, 2009 | Another fish dish!  This time I made a bunch of fried tilapia.  Sooo easy to make.  Wash the fish, bread it, and drop it in the pan!  Easy cheesy.  Seriously though, I made a big batch and also had it for breakfast and lunch the next day, haha.  Of course it tastes the best right after it’s made.

OH yes, and SteamFresh brussel sprouts! Yum.  =)

Lemon Pepper Salmon Steak

June 16, 2009 |  One of the “meats” that I’m comfortable with cooking with is fish.  It’s easy, tasty, and healthy!  I made lemon pepper salmon steaks this time.  Pretty basic– just lemon pepper, lemon juice, olive oil, and garlic.  For vegetables, I got some SteamFresh veggies– asparagus, gold & white corn, baby carrots.  I love that stuff!  It tastes good right out of the bag!

I’m not a fabulous cook or anything though one day I’d like to cook more fun and different foods when I have the time.  For now, I can just work on the quick meals so I can fit in work/studying!
